Executive French Chef Position

Rapid City/ Mount Rushmore has an opening for a French Chef to work
at
our Rapid City, SD Hotel.
This is an opportunity to work with a small group of culinary
professionals.
The Executive French Chef requires a bachelor’s degree in culinary
arts, its
foreign equivalency, or its equivalency with specialized experience in
French
cuisine. The Executive French Chef will be responsible for food
preparation
and culinary management disciplines as food and beverage management,
kitchen
management, inventory management, menu development and costing. The
Executive French Chef will oversee the management of various food
preparation
stations, providing training to junior chefs, supervising and
coordinating the work
of cooks and other kitchen staff members, overseeing portioning and
garnishing,
and managing overall kitchen operations. The position additionally
requires the
creating and testing of new menu items and the management of culinary and
food
preparation operations to ensure efficiency and profitability, the
standardization
of recipes, and managing supplies, purchasing, and inventories. The
position also
demands that the Executive French Chef negotiate and interact with local
suppliers
to access top-quality produce, developing new culinary styles and
incorporating
them via staff training, participating in marketing activities, arranging
special
testing menus, and managing portion and cost controls. The offered salary
is
Mid #30,000/year DOE, plus bonuses and normal employment benefits.
